Sizzling Fajitas

Sizzling Fajitas
Prep:  10 minutes
Cook:  15 minutes
Total Time:  25 minutes
Serves 4
Ingredients
·       2 tsp. olive oil 
·       2 cloves garlic, minced 
·       1/2 C salsa 
·       Chili powder, to taste
·       1/4 C nonfat sour cream 

Directions

1.      Heat olive oil in a medium skillet.  Add onion, pepper, and garlic and sauté briefly.  Add meat, reduce heat to medium and sauté until no longer pink, about 10 minutes.

2.      Stir in salsa and chili powder to taste.  Saute for 5 more minutes.

3.      Spread 1 tablespoon sour cream in a thin layer on each tortilla.  Divide the meat mixture on top of the tortilla, sprinkle each with cheese, wrap and serve.

If you feel that this tastes a little bland, you could add some seasoning to the chicken and vegetables while it is cooking.  If you are not worried about salt intake, I would suggest using a McCormick fajita seasoning packet.  If you are watching your salt intake, or just don’t like things too salty, I would suggest adding some Mexican oregano, cumin and cilantro.  Keep in mind that you will be adding salsa after it is prepared.
